Light and Cool Recipes for the Summer

By Robin Nobles (7/17/98)

During the hot summer months, most people like to eat foods that are light and cool--nothing too heavy. Salads, fruit dishes, and cool pasta recipes are all popular summertime foods.

We'll begin our Internet tour at Meals for You, an excellent recipe site on the Web. Click on Individual Recipes by Category to go to a listing of categories that includes Summer Fare, Fresh and Seasonal Recipes, and Salads. Not only will you find recipes at this site, but you'll also find a complete nutritional analysis and a shopping guide!

How do fresh blueberries, raspberries, or blackberries sound to you? At Hurst's Recipe Information, you'll find recipes that utilize those berries, as well as recipes using gooseberries, boysenberries, and currants. How about a Summer Blueberry Pie or Quick Blackberry Cobbler?

At Campbell's Creative Kitchen, click on Featured Summer Recipes for summertime recipes using Campbell's soup products. Does a Broccoli Cheese Potato Topper sound good to you? How about Grilled Chicken Salad?

In the Kitchen is a wonderful website that offers new recipes each week. Recent examples include Ice Cream Cookie Cones, Carey Brothers Old Fashioned Lemonade, Strawberry Hand-Pie, and a Pink Smoothie Deluxe.

Another impressive recipe site is the Internet Chef. Click on Ice Cream for recipes such as Banana Cookie Ice Cream or Ben & Jerry's Orange Cream Dream Ice Cream. Under Salads, you'll find recipes like All-in-one Salad Bowl, Artichoke Pasta Salad, or Asparagus Shrimp Salad. Fruit recipes include Apple Potato Salad and Apple Cake In A Jar.

The Epicurious Eating Recipe File features over 7,600 recipes from Bon AppŽtit and Gourmet magazines, as well as recipes from classic cookbooks. Search their database by keyword, main ingredient, meal or course, or preparation. I searched for "grill" recipes and found 159, including Beef and Shrimp Kebabs, Margarita Chicken, and Green Mountain Maple Barbecued Chicken.

At Progessive Farmer's Bring a Summer Dish website, you'll find recipes such as Mississippi Cornbread Salad or Make-Ahead Magic Potato Casserole. Click on Go to the Recipe Archive for recipes for backyard barbecues, ice cream creations, or recipes for preserving the garden flavor all year round. The site also features recipes from Cooking Light and Southern Living magazines.

At the Foghorn Online Magazine, you'll find categories such as Low Calorie Dishes, Vegetables, and Seafood. Look under Salads for Caesar Salad or Creole Rice Salad, or check out Other Desserts for a Marinated Fruit Bowl or Honey Peach Ice Cream.
