Cool, Refreshing Summer Recipes

By Robin Nobles (6/25/99)

With the Fourth of July coming up, many people are planning to cook outside on the grill. Or, they’ll prepare refreshing foods such as fruit salads or marinated vegetables—anything to stay cool during the hot days of summer.

At the Campbell’s Kitchen, you’ll find recipes such as Picnic Chicken Salad Sandwiches or Grilled Chicken Caesar Salad. At the site, you can even add recipes to a recipe box, then print out a shopping list. You’ll also find helpful tips, like how to quickly chop an onion or how to shell shrimp.

How would Citrus Iced Tea sound on a steaming hot day? Do you think your kids would like Peachsicles? Waldorf Salad is a particular favorite of mine. At Canadian Parents Online, you’ll find these refreshing recipes, as well as Maple Barbecued Chicken, Apple-Carrot Slaw, and Home-made Orange Julius.

June is "National Dairy Month" month, so why don’t you visit the I Love Cheese website for delicious summer recipe ideas like Cream Cheese And Pecan-Coated Grapes. Or, click on Recipes at the top of the page for an impressive assortment of cheese recipes.

Visit Good Housekeeping’s Great American Food site for recipes such as Bourbon-Marinated Steaks, Coconut Shortcakes With Custard, and Bumbleberry Pie, among many others.

In the swimming suit season, we certainly don’t want to gain unneeded pounds. At Healthy Ideas, you’ll find recipes "that have been de-fatted by Prevention nutritionists." Recipes include Molded Berry and Fruit Salad, Vegetable Kabobs, and Scalloped Apples and Raisins.

Do you enjoy barbecue food? If so, Barbecue & Grilling is the place for you, where you’ll find cooking tips, discover barbecue and grilling recipes, or learn about the best barbecue restaurants in the country.

Webmans Fresh Vegetables features a listing of fresh vegetables, then offers suggestions on how to select, store, and prepare those vegetables. Or, you can click on Recipes, then search by recipe or nutritional preferences, such as low fat, no sodium, or no cholesterol.

Fresh fruits always taste so delicious in the summer months. Visit Fruit Recipes for a listing of subcategories such as cantaloupe, pineapple, and strawberries. Under Apple Recipes, you’ll find ideas such as Cherokee Campfire-baked Apples or Caramel Apple Dip. For recipes in other categories, click on "Soar" at the bottom of the page. There are currently 55,722 recipes in this index.

Finally, visit Betty Crocker, type in a list of ingredients that you have on hand, and let Betty tell you what you can fix for supper!
